Workshop Details:

The goal of this Wiley Workshop is to increase your confidence and independence at home and in your own canning practice. This workshop is hosted by founder, Chelsea J. O’Leary, from her wood cabin.

We keep our workshops small and fun. You will be emailed ahead of time with further details—including a Zoom invitation.

Introduction to Home Food Preservation is designed for people who do not yet can, pickle, or preserve at home but would love to begin. It’s a greeting into the world of canning, pickling, and preserving. Before you invest in the proper equipment and tools, join Chelsea for two hours to further understand this practice and the ways it deepens our relationship with ourselves and our food.

The aim of Introduction to Home Food Preservation is to understand the key concepts of canning, pickling, and preserving. We do not physically can, pickle, or preserve during this workshop. Introduction to Canning, Pickling and Preserving is designed to be an exciting lecture-style workshop. It is a preparatory prerequisite to entering the world of home food preservation. Our workshop agenda is below.

Introspection | We begin every workshop with a very brief introspective exercise to ground ourselves for our time ahead.

Canning vs. preserving vs. pickling | We define, compare, and contrast the three major themes of home food preservation.

The science of canning | We review concepts such as heat, pressurization, pH, and why they matter.

The safety of canning | We explain how to can, pickle, and preserve safely at home.

Equipment & tools | We cover which equipment and tools to buy to simply get started.

Q&A | This is a time to ask questions about beginning your canning, pickling, and preserving practices.

Next steps | You will leave this workshop with the foundational knowledge needed to understand exactly what is happening in your kitchen as you can, pickle, and preserve seasonal fruits and vegetables. In other words, you will leave this workshop with a sharpened intuition for this practice. Next, you will know exactly what to purchase or borrow to can, pickle, or preserve for the first time at home. Lastly, you will be ready to dive into your first recipe!
